Salmon and potato salad with lemon poppy seed dressing

750g baby chat potatoes

100g snowpeas

100g Smoked salmoncut into thin strips

1/2 yellow capsicumsliced into strips

2/3 cup natural yogurtAustralian

1 tbsp lemon juice

1 tsp Lemon zestgrated

2 tsp poppy seeds

Salt & Pepperto taste

Step 1

Boil potatoes until just tender. Add snowpeas to saucepan and cook for 1 minute and drain under cold running water. Allow to cool.

Halve potatoes and arrange in a serving bowl with snowpeas, salmon and capsicum .

Combine yogurt, lemon juice, lemon zest and poppy seeds, season with salt and pepper to taste and drizzle over salad. Serve.
