Rack of Lamb with a Parsley, Mint & Garlic Crust

    Pre-heat oven to 180°C.

    Melt the olive oil and butter in a pan and add the lamb turning frequently to brown all sides for approximately 2 minutes.

    Transfer the lamb to an oven dish and put in the oven for 5 minutes, then remove and let rest.

    Meanwhile blitz parsley, mint and garlic in a food processor until chopped fine, then add the breadcrumbs and pulse until combined to make your crust. Tip out onto a plate.

    Brush the lamb with the honey and roll in the herb and breadcrumb mixture.

    Return to the oven and cook for approximately 10 minutes. Cook a little longer if you prefer your meat well done.

    Remove from the oven and let rest for 10 minutes before serving.
