Rack of Lamb with a Parsley, Mint & Garlic Crust
1 tbsp Olive oil
1 tbsp Butter
1/2 bunch fresh parsley
1/2 bunch fresh mint
2 cloves garlic
4 tbsp breadcrumbs
1/2 cup honey
Salt & Pepper to taste
Pre-heat oven to 180°C.
Melt the olive oil and butter in a pan and add the lamb turning frequently to brown all sides for approximately 2 minutes.
Transfer the lamb to an oven dish and put in the oven for 5 minutes, then remove and let rest.
Return to the oven and cook for approximately 10 minutes. Cook a little longer if you prefer your meat well done.
Remove from the oven and let rest for 10 minutes before serving.
