
Coconut Poached Fish
Ingredients

1/2 brown onion sliced

1 tsp coconut oil
-
400ml coconut cream
-
1 LimeGrated zest and juice

1 tbsp fish sauce

1 tbsp brown sugar

2 cloves garlicCrushed

150 g firm white fish filletsFour pieces

50 g baby spinach leaves

steamed rice
-
sliced red chillies and some fresh coriander to serve
Directions
Step 1

In a medium fry pan heat coconut oil and fry onion, zest, garlic and a tiny amount of the red chillies for approximately 1 minute or until onion starts to soften.

Next add lime juice, fish sauce, brown sugar and coconut cream and bring to boiling point over medium heat.
Step 3

Reduce heat to low and add fish fillets. Simmer gently over low heat for approximately 8 minutes or until fish flakes easily with a fork.

Remove fish and stir spinach leaves through the coconut sauce, turn off the heat.
Step 5

Serve with rice and optional sprinklings of chilli and fresh coriander.
