Breakfast Tart
How’s this idea for a healthier spin on a breakfast fry up? Combine everything you normally fry up in a pan full of oil and instead bake in a small tart case in the oven to deliver a breakfast tart that is both pleasing to the eye as well as the tastebuds!
Ingredients

2 eggs

3 slices ham

4 cherry tomatoessliced in half

2 slices wholemeal bread(crusts removed)

Butterfor greasing tart case

Salt & Pepperto taste

Directions
Preheat oven to 180°C and grease tart case.
Layer 1 slice of bread on the bottom of the tart case as the base and cut the other slice into 4 lengths to form a crust for your tart.
Crack one egg over the bread, then layer the ham over the egg so the ham curls up against the sides of the tart. Place cherry tomatoes around the edge of the tart and crack the second egg into the centre of the tart.
Bake for approximately 20-25 minutes or until egg is firm but yolk is still soft.
Serve with your choice of fresh herbs and a little salt & pepper to taste.
