Blueberry Oat Loaf
For a delicious morning or afternoon tea treat, this blueberry oat loaf is just delcious and a wonderful and easy cake to prepare and cook.
Ingredients

1 cup oats

1 cup milk

1 cup caster sugar

1 Egg

1/4 cup Olive oil
-
1 cup blueberriesfresh or frozen

1/2 tsp bi-carbonate of soda

brown sugarfor sprinkling

Directions
Pre-heat oven to 180C (or 170C for fan-forced oven) and grease a loaf tin.
In a mixing bowl combine oats with the milk and let stand for 2-3 minutes so the oats soak up the milk.
In a separate jug mix caster sugar, egg and olive oil together and then pour into the mixing bowl combining with the milky oat ingredients.
Next sift in the self-raising flour together with the bicarbonate of soda and mix until combined.
Pour the mixture into a loaf tin adding a few more blueberries, sprinkle of oats and brown sugar over the top.
Bake for approximately 35-40 minutes and allow to cool on a wire rack.
