Blue Corn, Black Rice and Chia Wrap
A healthy and delicious wrap made of blue corn and ancient grains
50g Chicken Breast
25g Lebanese eggplantsT
10g baby spinach leaves
Power wraps made with blue corn, black rice and chia, layered with hummus, slices of spiced chicken breast, roast pumpkin, eggplant, sprouts, red onions, spinach & chilli sauce then rolled.
In a pan drizzle a small amount of oil of approz 15 mls and rub the wrap in the oil whereby it will soak in, briefly heat each side which makes it more pliable for folding.
Spread hummus all the way to the side of the wrap.
Place spinach, eggplant, pumpkin, chicken red onions & sprouts half way between centre and side of wrap then Roll. Place rolled wrap in pan with lid and heat for approximately 2 minutes
